Forty million Americans struggle with hunger, the same as the number of people officially living in poverty. One in every eight Americans are food insecure: That is, they live in a household with limited or uncertain access to enough food to support a healthy life. Households with children are more likely to be food insecure.
The U.S. wastes edible food at an alarming rate. Each year, about 72 billion pounds of otherwise consumable foodstuffs never make it onto store shelves, according to estimates from Feeding America, a large hunger-relief group. Annually, that amounts to roughly 40 percent of all food in the US, the group said. Those figures don’t include the volumes of food that spoil either at rest or in transit. Nor does it cover the mountains of scraps thrown away every day by hotels, restaurants, consumers and the like.

As a child, Tim Rios remembers going food shopping with his parents. He and his siblings weren't allowed to enter certain aisles in the supermarket because the adults didn't want their children to get tempted by unhealthy snacks and especially food the family couldn't afford. "My parents worried all the time about getting enough healthy food on the table," Rios, whose family came to the U.S. from Mexico in the early ‘80s, says.
